First you make the tart shell on page 414, I make it with one egg and bake it on less heat 190°C not 200°C as Dorie suggests. The caramel is made with 4 egg yolks but I have seen recipes with 2 whole eggs, to me that sounds better I end up not using the egg whites. The color is probably better with the egg yolks. There was less sugar in this recipe than I would have thought.
We had my family over and they all loved the tart I mean what is there not to love caramel and tart shell made with real butter. This one is a keeper.
