Cauliflower tabbouleh, page 95

I got this idea from Tricia S. It was easy to make and very good. I did not get any mint this time but will make this again and then with mint. I did chill this for an hour and it was a big success in my house. Dorie has raisins in the recipe but I did not use them. I have made tabbouleh many times and the only thing that is common in these two dishes are mint, parsley and lemons. This is excellent for people on the keto diet, no grains only cauliflower.

    I was interested in Tricia’s post also and now am even more convinced to make this tabbouleh after reading your post. I’ve tried the Keto diet a time or two and it does work. What’s not to like about bacon and eggs and steak? And, you do lose weight quickly. I just don’t last more than 2-3 days on it, however. In fact this morning I decided I might try again so I had bacon, eggs – loved them – but by lunchtime decided I was over it. Obviously I don’t do diets well!

    Yay !!! so fun that you were inspired to make it. It was a delicious and healthy option for sure. I am hiring I have the ingredients to do the Shepherds Pie after seeing Mardi results this week 😉 I guess that is the silver lining of the COVID recipe selections – it’s a fun surprise what everyone is making.
