Summer Vegetable Tian, page 234

Loved it. We are not going to Provence this summer for the first time in 10 years. This dish is the perfect Provencal dish to have when you are missing the of South of France. So we are going to be making more Provencal dishes this summer. I was lucky to have some buffalo tomatoes and I baked it for close to 90 min. We had the dish with couscous and chicken.

    I also served my dish with chicken. Sorry to hear you can’t travel. We are in the same boat, we travel every year but not this one. Hopefully next year will be better.
