Grilled, dry-rubbed, Rib-Eye steaks, page 145

What a great meal. My DH was not home and there was a storm outside so I did not use the bbq. I used my very good stainless steal pan and it worked very well. My DH was nicely surprised when he got home. I did also make the Cowboy Caviar Salad or Side page 90. This I will have to make again and be careful with the smoked paprika.

Chicken Chili Tamale Pie, page 125

I was not able to find all the ingredients for this recipe. Missing was the can of diced tomatoes with chile, I used tomatoes with garlic, also canned chipotle in adobe sauce. I did use canned jalapeño instead. I used just a few jalapeños not the whole jar. Also I used maple syrup instead of honey.

I have never made this kind of food before and it was very good and also did not take too long to prepare. We all loved it. So doing this one again.

Moroccan spiced chickpea and noodle soup, page 66.

This was a lovely soup.

I didn’t find any angel pasta and I had some grounded lamb on hand so I used that.

I made the meatballs an Ottolenghi kofta from his book Jerusalem. I was also serving pitas, salad and some tahini sauce as a back up plan. In case my guys would not want soup. It was totally unnecessary, they all loved the soup and had more than one serving. I see that I forgot the lemons oh well next time.

Meatballs and Spaghetti, page 157

I have not posted since last summer. This is my post number 200!

I want to get back in the game and I have been making some of Dories recipe but not posted. I will post them one of these days.

So to get my mojo going I made the spaghetti meatballs. This is a new one for me to have meatballs with oats and walnuts. It was a nice change. We do not have hot Italian sausage over here so I used minced pork and chili. I have no idea how it is suppose to taste like. I did not bother frying the meatballs I baked them in the oven, less clean up and a time saver.

I was nicely surprised as how quickly this all came together.

Summer Vegetable Tian, page 234

Loved it. We are not going to Provence this summer for the first time in 10 years. This dish is the perfect Provencal dish to have when you are missing the of South of France. So we are going to be making more Provencal dishes this summer. I was lucky to have some buffalo tomatoes and I baked it for close to 90 min. We had the dish with couscous and chicken.

Ponzu Chicken

We loved this dish it was the sticky rice with ponzu chicken. Well I did not find any ponzu so it was a soy sauce and lemons also these are boneless chicken thighs I like them better than the breast. I have to try and find the ponzu sauce and do thins one again. I have had some requests from family members.

Blueberry-Buttermilk Bundt Cake, page 254

I made my own butter milk out of lime juice and whole milk. We do not carry this item over here. I used lime zest for this cake and blueberries from Ólafsvík that we picked during our summer holidays. I love this cake it is so moist and delicious.

I made this cake last year to make use of my freshly picked blue berries. I just did not come up with anything to make. I like better to have an assignment.

Cauliflower tabbouleh, page 95

I got this idea from Tricia S. It was easy to make and very good. I did not get any mint this time but will make this again and then with mint. I did chill this for an hour and it was a big success in my house. Dorie has raisins in the recipe but I did not use them. I have made tabbouleh many times and the only thing that is common in these two dishes are mint, parsley and lemons. This is excellent for people on the keto diet, no grains only cauliflower.

Last-Of-The-Bunch Banana Bundt, page251

Well what can I say I do not like bananas. I did not try this one my self, the family said it was like banana bread. I have made banana bread before but never with so much sugar. Then you have the bananas, sweet coconut and chocolate. The butter is 113 gr and 113 gr of coconut oil. You get full on a small slice of cake.

The verdict: I will not be making this one again. Also can I ask you do you use bananas that are still yellow in color or do you wait for them to get brown before you use them in banana breads?

Ginger Fried Rice, page 239

Well this was great all members of the family agreed, make this again. I used long rice and made them for the dish. I did not have any left overs. I cooled them down before using. I did not find any ponzu sauce so I used kikkoman soy sauce and lemon juice. I did find the Gochujang but it was very expensive but I got it any way. Bok choy was nowhere to be found so I used leek. With the rice I made Ponzu chicken on page 112. So doing this again. You can use what you have on hand with no problems.
